Here’s my sweet potato porridge: In a crockpot, dump 2 cans diced tomatoes, about 5-6 parboiled and peeled (or not) sweet potatoes, a bunch of chopped kale, 1/2 bunch of cabbage, 1/2 onion, 1 heaping T of coconut oil, and about 1 c. unsweetened coconut milk. Mash down the sweet potatoes part way. Season with curry, black pepper, and others that you like. Crock pot away on med-high for 1/2 day +. Enjoy! Oh, you can add your choice lean protein, i.e. canned salmon, tuna, chicken or turkey breast, etc.

This is not really a recipe, but I like to have unsweetened applesause in my morning oatmeal and a little ff 1/2 & 1/2. also found Ezekiel wraps and english muffin @ Yokes on Argonne and Montgomery in their great health food section.

Another good Kale recipe:
1-2 cloves garlic rough minced
1 T or less olive/oil for sauteing or use broth/H20 if you like
1 bunch kale, washed and rough chopped
up to 1 14 oz can tomatoes (diced/whole/crushed/whatev)
salt to taste
saute up the garlic - careful not to brown or burn - for a minute or so, add kale and sprinkle with a bit of salt for a few minutes or until getting wilty, add tomatoes - up to the whole can you can eyeball it whatever you like - cover and simmer for about 10 minutes or so +/-.
This is clearly a real loosey-goosey recipe but it is delicious! I love to eat it with steamed or roasted sweet potato and beans - any kind. YUM!

forgot to add in my recipe that once you add the kale it is good to add a sprinkle of salt to aid the wilting!

Coming into the half way mark. This has been a learning experience about my food habits and what I miss and what I can give up. Have worked too hard to go back to bad habits. On to summer!
